The most common form of evening entertainment in San Sebastián is to go tapas-tasting in the old quarter. Throughout the rest of Spain this is known as a tapeo, or tapas crawl. In San Sebastián it's called a poteo-ir-de-pinchos, or searching out morsels on toothpicks. In most of the Basque country, the tapas-eating ritual is different from that in the rest of Spain. A platter of tapas (pinchos) is placed on the bar, and patrons spear the tasty morsels with toothpicks; when they're done, servers tally up the toothpicks to determine how much is owed. A pale, dry white wine, known as xacoli, is usually consumed chilled in a plain highball glass.
